Tsoureki Politiko is the traditional sweet bread that stands out for its excellent crust and the aroma of mastic, mahlap and orange. Ideal for festive tables, this brioche is easy to prepare and remains soft for a long time, while it has great resistance to puffing and kneading.

  • Water: 320-350 gr
  • Soft margarine or butter 82% melted: 80 gr
  • Fresh yeast or dry yeast: 100 or 35 gr

Mix all the ingredients (except the butter) in an electric mixer or a stand mixer on low speed for 5 minutes with the hook attachment.

Then increase the speed and knead for 15 minutes.

Add the butter towards the end of the kneading.

Rest the dough until it doubles in volume.

Cut the dough into pieces of the desired size and shape into braids or round buns.

Place the brioches in the steamer for about 30 minutes.

Bake at 160°C in a preheated oven for a time corresponding to the size of the product.
