Sauce with rich chocolate flavor, ideal for chocolate cake syrup. By adding 1 kg of dark chocolate to the basic recipe, you can create a profiterole sauce. Perfect for ice cream as a ribbing or topping.
- Mixture: 1000 g
- Cream of milk-vegetable: 1000 g
- Water: 1000 g
- Butter 82%: 100 g

Put the cream and water in a saucepan and when it is hot, add the mixture, stirring well until it boils.

Remove from the heat and add the butter and a little cognac (if desired).
