Charlotte Yoghurt is the basis for the preparation of French-style Charlotte and Bavaroise cream by the cold method. Its excellent structure and yoghurt taste make it ideal for use in desserts that require freezing.

- Mixture: 1000 gr
- Cold water: 1250 gr
- Sandwich: 5000 gr

Mix the ingredients in a mixer on high speed until the cream is smooth and thick.

Reduce the speed to low and add the cream (vegetable or animal) slowly until it is incorporated without thickening (semi-runny).
