Charlotte Neutral is the basis for the preparation of French-style Charlotte and Bavaroise cream by the cold method. It has an excellent structure and is ideal for combinations with fruit flavours or fruit pulps. Suitable for freezing.

- Mixture: 1000 gr
- Cold water: 1250 gr
- Sandwich: 5000 gr

Mix the ingredients in a mixer on high speed until the cream is smooth and thick.

Reduce the speed to low and add the cream (vegetable or animal) slowly until it is incorporated without thickening (semi-runny).

Add flavours or fruit pulps of your choice.
