Semifreddo – Parfait is an easy and quick cream base for making parfait and semifreddo, using the cold method. Its recipe ensures that the result will not crystallize during freezing, offering a soft and creamy texture. You can also customize the taste by adding fruit, drinks or nuts, making it ideal for every taste preference.
Dosage:
Semifreddo:
- Mixture: 250 gr
- 35% or vegetable cream or half-and-half: 1000 gr
Parfait:
- Mixture: 300 gr
- Cream / vegetable: 1000 gr
- Ready-made quiche: 200-300 gr
- Fruit, drinks, nuts, etc.: In the desired quantity

Mix the cream and the mixture in an electric mixer with the whisk attachment on high speed until the cream thickens and becomes semi-rigid.
