Prozyme Mix 5 is the ideal mix for the preparation of baked goods with a unique aroma and taste. The sourdough starter contained in this mix offers the authentic taste of traditional bread, while the right proportions of flour and ingredients ensure a perfect texture and taste in every bread.

Add all the ingredients to the mixer and mix them either in a simple kneader (with a fork) for 7-8 minutes or in a high-speed mixer on slow speed for 3-4 minutes.

Rest the dough for 45-60 minutes.

Cut the dough into pieces of desired weight and shape it into the desired shape, forming it softly.

Stove at 32-35°C with 70-75% relative humidity for 45-60 minutes.

Bake with a little steam at 210-220°C for a time depending on the weight of the product.
