Brioche Blend C offers the perfect base for fluffy and delicious brioche. Ideal for snacks, bread rolls, peinari or sweet fillings, it offers excellent taste and texture, either plain or with additives.

Dosage:
No eggs:
- Mixture: 1000 gr
- Cold water: 350-370 gr
- Yeast: 60-70 gr
- Margarine/Butter 82%: 70 gr
With Eggs:
- Mixture: 1000 gr
- Eggs: 300 gr
- Cold water: 150-200 gr
- Yeast: 80-100 gr
- Margarine/Butter 82%: 150 gr

Mix all ingredients in a food processor for 2 minutes on slow speed and 10-12 minutes on fast speed.

Rest the dough for 10-15 minutes, cut into pieces of desired weight and rest again for 5-10 minutes.

Shape the pieces into their desired shape and stew at 35°C with 75% relative humidity for about 20-30 minutes.

Brush the surface with egg and steam at a time and temperature depending on the size of the product and the type of oven.
