Description
This baguette mix creates a traditional French baguette with a fluffy crumb and crispy crust. Ideal for making delicious baguettes with the authentic taste and texture.
- Flour 70% strong: 3000 gr
- Mixture: 300 gr
- Water (60-65%): 1800 gr
- Yeast: 60 gr

Mix the ingredients in a mixer on slow speed for 4-5 minutes.

Then mix at high speed for 3-4 minutes.

Let the dough rest for 5 minutes.

Cut the dough into pieces of the desired weight and shape into a round shape. Let them rest for another 20 minutes.

Shape them into a finished baguette shape.

Stovetop for 60-90 minutes at 32-35°C with 75% relative humidity.

Steam at 230°C for 25-30 minutes, leaving the tamper on for the last 5 minutes.
