BRIOCHE POLITICAL

Materials:

  • 1 kg of POLITICO CHURCH mix
  • 320-350 g water
  • 100 g fresh yeast or 35 g dry yeast
  • 80 g soft margarine or 82% melted butter

Execution:

  1. Mix all the ingredients except the butter in the mixer together, on low speed for 5 minutes with the hook or speed mixer and 15 minutes on high speed.
  2. Towards the end, add the butter.
  3. Rest the dough until doubled and cut into pieces of desired size.
  4. Form braids or round buns and place in the steamer for about half an hour.
  5. Bake at 160°C in a preheated oven for a time corresponding to the size.

Semifreddo polite

Materials:

  • 250 g Semifreddo polite mix
  • 1000 g. 35% cream (or 500 g vegetable cream with 500 g 35% cream)

Execution:

  1. In a mixer, mix the cream and the mixture with the whisk attachment on high speed until semi-liquid (not stiff).
  2. Then freeze.

Composition:

  1. Cut the brioche into slices, place it on a baking sheet and bake in the oven for 10 minutes at 160 degrees.
  2. Add syrup (29 B) and allow it to cool.
  3. Prepare our Semifreddo polytiko cream and place small balls in a pastry bag with a round piping bag.
  4. Decorate with cinnamon and pistachios.
