EDITORIAL:
1. CHOUX – ECLAIR EXTRA
MATERIALS
- 2100 g. Hot water (45-50 °C)
- 1000 g CHOUX ECLAIR EXTRA
- 360 g. Sunflower oil
- 200 g. Fresh Egg
EXECUTION
- Add the ingredients together to the mixer and mix on medium speed with the paddle attachment until smooth.
- Bake in a preheated oven at 200 °C for about 30 minutes with the timer closed.
- Open the tamper and bake for another 5-10 minutes depending on the size.
2. MILKY FREE
MATERIALS
- 1 kilo MILKY FREE
- 2,5 kg of cold water
- 1-2 kg of 35% cream whipped to whipped cream
EXECUTION
- Mix the ingredients in the mixer on high speed for 5 minutes until the cream is smooth and thick.
- Incorporate whipped cream into the cream.
3. SAUCE CHOCOLATE FREE
MATERIALS
- 1000 g. SAUCE CHOCOLATE FREE
- 1000 g. 35% cream
- 1000 g. Water
- 100 g. Butter 82%
- 1200 g. Sugar free dark chocolate
EXECUTION:
- Put the cream and water in a saucepan and when it is hot, add the mixture, stirring well until it boils.
- Remove from the heat and add the butter and chocolate.
- Homogenize with a stick blender and set aside to cool.
MONDAY:
- In a bowl of your choice, place the skewers filled with MILKY FREE about halfway up the bowl.
- Finish with the profiterole sauce.
