Traditional Parfait prepared quickly and easily by cold method, by beating in a mixer. Ideally combined with FoodStuff ‘s KIGE MIX product for the perfect fluffy texture. You can add fruit, nuts, drinks, chocolate etc. It keeps in the display case for a long time, does not harden and does not “splash”.
Recipe
- 1 kg Vegetable or animal cream
- 0.3 kg Mix Parfait Base
- 0.3 kg Killet
Execution
- Whisk, at high speed, kjie (KIEVE MIX FoodStuff: 1 kg hot water, 700 g kjie).
- Mix the cream (vegetable or animal) with the parfait mixture in a mixer, using a whisk, until it becomes semi-liquid (not thick).
- For the parfait you add quiche, almonds, fruit, drinks.
- For chocolate parfait add 150 g cocoa.
- Freeze.
